How can you not love food whose preparation requires you to pop open and unroll a can of pre-made pastries?  Plus, there’s something quite comforting about sitting back and enjoying a ‘quiche’ that has more cheese than egg plus a good measure of pork.  However, if you need to dress it up a bit, this dish pairs nicely with a light breakfast wine like a gewürztraminer.  And a side of Lipitor.


Southwestern Ham & Cheese Pie

Ingredients:

2 eggs
2 c cubed ham
2 c cubed jack/pepper jack cheese
¼ c chopped bell pepper
¼ c Parmesan cheese
8 oz can of crescent rolls

Directions:

In a large mixing bowl, beat eggs lightly and add Parmesan cheese. Mix in ham, jack cheese, and bell pepper. Separate crescent rolls into 8 triangles. Place 5 triangles in a 9” pie plate a 'pinwheel' fashion and press together to form crust. Pour mixed ingredients into pie plate. Cut remaining crescent roll triangles into strips and place over ingredients to form a lattice top. Press with fork along edges to seal. Bake pie at 325 F for around 1 hr until crust is golden.
